Appetizer : * Cucumber tagliatelle with peperoncino, honey & peanut powder

 

Starters :

* Raw asparagus salad with citrus segments, shallot & mint

* Sweet peas & fava beans gazpacho, whipped curry cream, dried bresaola

* Prawn ceviche with corn, black beans, beef tomato, cilantro, lime, olive oil & pink pepper

 

Main Courses :

* Creamy risotto with lemon, green asparagus, shrimp & crispy sweet chorizo

* Pan-fried sea bream fillet, basil & orange tomato sauce, crunchy summer vegetables, smoked bacon polenta

* Braised lamb shank with cardamom perfumed glazed carrots, socca crisp

 

Desserts :

* Poached pear verrine & orange segments, infused star anise white chocolate sauce

* Tiramisu kirch-raspberry, strawberry tagada powder

* Chocolate trio, mint-flavoured custard, crispy mint leaves

 

Individual buns included

Starters :

* Tuna tataki, sesame seeds, avocado, cucumber, cilantro, ginger-soy sauce & peppery mayonnaise

* Pineapple shrimp skewer, Goji-Ginger-watermelon gazpacho

* Gravelax salmon, cumin marinated zucchini, spinach cream, sesame tuile

 

Main Courses :

* Duck breast with caramelized turnips, scallop potato, braised cabbage, mesclun & raspberry sauce

* Salmon fillet in crispy serrano ham with rosemary, celery puree with walnuts, poached romanesco cabbage

* Skate fillet stuffed with potato mousseline, fried celery leaves, dried tomato chips & capers

 

Desserts :

* Pink grapefruit segments, passion fruit sorbet, candied ginger in syrup, vanilla jelly & pink pepper, almond & orange tuile

* Red fruit Pavlova, almond & lemon Lace tuile

* Pear-almond meringue tart, licorice infused chocolate sauce, almond & ginger tuile

Appetizer : * Serrano, foie gras & fig jelly on toast

 

Starters :

* Spring salad with raw & cooked vegetables, sesame dressing

* Royal sea bream tartare, apple, kiwi, curry dressing, pickled red onion, fennel & pickled radish

* Beef tenderloin tartare flavoured with truffle, rucola, olive oil & olives, tomato compote, balsamic vinegar syrup & parmesan tuile

 

Main Courses :

* Halibut fillet, champagne sauce, salmon eggs, crispy potatoes, tomato condiment

* Lobster medallions, fresh egg tagliatelle, star anise cream & fresh herbs

* John Dory fillet with bourbon vanilla sauce, coppa chips, wild rice sautéed with vegetables, pesto drops

 

Desserts :

* Crêpes stuffed apple cream tonka bean flavoured, almond & carrot tuile

* Dark chocolate marrow, Kirch white chocolate sauce, almond & mango tuile
